{homemade} giant, chocolate + butterscotch chip cookies

1 stick butter
3/4 cup white sugar
1 packed cup brown sugar
1 egg
1 egg yolk
2 cups flour
1/2 tsp baking soda
1/2 tsp salt
1 tbsp vanilla extract
2+ cups chocolate chips (your choice)

1) preheat oven at 325 degree fahrenheit
2) sift flour, baking soda, and salt together and set aside
3) cream butter and sugar until smooth
4) add egg and egg yolk and mix until combined
5) add vanilla extract and combine
6) add dry mixture and combine
7) add chocolate chips
8) spoon onto parchment paper on baking pan, leaving about 1.5+ inches between cookies and flatten slightly (should be thicker than 1/4 inch)
9) bake for 15-17 minutes or until brown

Strawberry Jello Shot
(follow recipe on box, but replace 1 cup of cold water with 1 cup of cold vodka and pour into hollowed halves of lime and let set completely before slicing in half)

Now, there’s a story behind this shot.
After a lot of painstaking work to hollow out 10+ limes (not as easy as it sounds), I made the mistake of slicing them and keeping them out of the fridge too long. The beautiful jello shots ended up melting on the way to the BBQ and what remained was a sad puddle of red jello with lime rinds floating on top. The jello was eaten, but I felt compelled to show the “before” picture to everyone so they knew what they were eating.

spam musubi

recipe:
for sushi rice
1) follow directions to cook short-grained, sticky rice (about 6 cups)
2) mix 1/4 cup of rice vinegar, 1/4 white sugar and 1 1/4 teaspoons salt in a small bowl
3) carefully mix in vinegar mixture with fully cooked rice

for spam
1) mix 1/4 cup soy sauce, 1/4 cup oyster sauce and 1/2 cup white sugar in small bowl
2) slice spam into 8-10 even slices
3) heat skillet on medium heat
4) place spam slices in skillet and cook for 1-2 minutes on each side
5) pour soy sauce mixture over slices and continue to cook another 3-4 minutes on each side

assemble spam musubi using musubi mold
